Course overview

Build your understanding of how to support safer, more enjoyable mealtimes for people with individual eating, drinking and swallowing needs.

This course explores swallowing difficulties, individual mealtime management plans, food textures, fluid thickness, positioning and supervision. You will learn why following the person’s plan and recognising changes are essential parts of everyday support.

Through short lessons and realistic workplace scenarios, you will consider meal preparation checks, respectful assistance, responding to concerns and documenting observations clearly.

  • Following Mealtime Management Plans: Identify the person’s prescribed food textures, fluid thickness, positioning, supervision and equipment requirements.

An unapproved straw or cup

A colleague offers an unapproved straw or cup.

Understand why equipment must match the person’s plan.

Scenario 3

New coughing during a meal

You notice new coughing or a wet-sounding voice during a meal.

Identify a change that requires a prompt response through the person’s plan and clinical pathway.

Scenario 5

Asked to leave someone unsupervised

Why Mealtime Management Matters in Care Work

Mealtimes support nutrition, hydration, social connection and enjoyment. For people with swallowing difficulties, they can also involve risks that require individual planning and attentive support.

Following the prescribed plan helps workers provide consistent assistance. Recognising changes in breathing, voice, alertness, intake or eating patterns can help the care team identify concerns and arrange timely review.

Respectful support is equally important. Offering suitable choices, using the person’s preferred communication and allowing time can help preserve independence and make meals more enjoyable.

Frequently asked questions

What is mealtime management?

Mealtime management involves supporting a person’s eating and drinking needs through an individual plan. This may include food textures, fluid thickness, positioning, equipment, pacing and supervision.

What is dysphagia?

Dysphagia means difficulty swallowing. It can affect a person’s ability to swallow food, drinks or saliva safely and efficiently.

What is IDDSI?

IDDSI stands for the International Dysphagia Diet Standardisation Initiative. It provides standardised descriptions and testing methods for food textures and drink thickness. Workers follow the levels prescribed in the person’s plan rather than selecting levels independently.

Is this course nationally accredited?

No. This is a non-accredited Professional Development Short Course. Successful learners receive a Certificate of Completion, not a nationally recognised Statement of Attainment.

How is the course delivered?

The course is delivered online, with downloadable resources to support your learning.

How long does the course take?

This quick online course takes approximately 45 minutes to 1 hour to complete. Work through the lessons and activities at your own pace, around your schedule.

When can I start?

You can start anytime. Enrol online and begin learning when it suits you.

Does this course qualify me to support someone with swallowing difficulties independently?

No. You also need training and assessed competence appropriate to the person’s needs, their mealtime management plan and your workplace requirements.

Can I change food textures or thicken drinks after completing this course?

Only follow the preparation instructions you are trained and authorised to implement. Do not independently change the prescribed food texture or fluid level. Seek clarification when instructions are unclear or a meal does not meet the plan.

Will I learn about choking and aspiration?

Yes. The course introduces warning signs, prevention principles and escalation. It does not replace practical choking first aid training.

Are choking and aspiration the same thing?

No. Choking involves an airway blockage. Aspiration occurs when food, fluid or saliva enters the airway and may happen without obvious coughing. Both require an appropriate response.

Are the workbook activities graded?

No. Workbook activities reinforce learning. Required course assessments will be identified separately.

Can I keep the course resources?

Yes. Download the Reference Guide, Workbook and Workplace Checklist for future reference. Always use them alongside current individual plans and workplace procedures.
